[Evolution] Filters don't seem to work

I have some problems with filters.  They only seem to work when I right click and choose apply filter.

shouldn't they just work when Evolution is opened?  Also, when reading
an email message, is there a feature
that will add the sender's address (or others as well) to my address
book?  In outlook you right click on the name and you can
add to address book.
