Not a dumb question at all!
A vFolder, or Virtual Folder, is really a hybrid of search, folder, and
filter. Basically, it looks like a folder, but when you open it up, it
performs a complex search on multiple criteria. So you get the effect
of a filter, only applied on-the-fly to all your messages. As you
change the criteria, and as messages arrive and are deleted, the
contents of the virtual folder change.
If the documentation is included in your version of Evolution, check out
the section called "Getting Really Organized with vFolders" in the
chapter on Mail. That should have a more in-depth discussion of
vFolders, although the actual user interface for the creation of
vFolders might be slightly different from the one described. (That's
fixed for version 0.5, due out some time in the Very Near Future, as in
tonight or tomorrow).
