Probably because the executables aren't stripped of debugging
information. This helps by making it possible to provide useful
debugging information when evolution crashes, at the expense of a bit
more disk space. Remember, Evolution isn't claimed to be stable and
reliable yet, and good detailed bug reports will go a long ways towards
getting it there.
