thank you for your interest in Evolution. You can see some of the
information on the Evolution wiki page:

which contains a subsection for developers:

Please note that Evolution doesn't mean only the evolution project, it
depends on evolution-data-server too, thus some changes can mean
touching either or both of them.
I suggest to search GNOME bugzilla for opened bug reports and pick
some. As the subsection for developers shows, there are some bugs
marked for new comers, which not necessarily mean they are suitable for
them, but it seemed to the developers that they are good to start with
for someone not knowing the project much. It's the "easy-to-fix bugs"
link on the wiki page.
