I don't think that Evince itself will support this feature soon, but
integration of the GNOME desktop lets you use many more advanced
features. For example please try to install Alexandria:

http://alexandria.rubyforge.org/

I hope you'll like it's library management features including tagging
and keyword search with indexing.
