Edit your toolbar and edit a History button. It's not perfect, but at least
partly offers what you were referring to.

In Gnome applications, Escape should only be used to close dialogs. Evince
is not a dialog, but a document window. Furthermore, PDFs are not strictly
read-only since they may also contain forms.
