If you ever try to read a pdf on a small screen device you will understand why I'm looking for this functionality :-) jeje. About the posibilitie for such a development, if I understand right, evince is a frontend for what the poppler library render? If so, if there is a similar library to render only the text it could be possible to do such user-cotrolled option. I will do some research and develope, if the result is something interesing I will share it.

Ah, gotcha.  That could be done as a separate backend for poppler.  I
wouldn't want to make it a user-controlled option for evince.  But if we
ever get something like a maemo-based evince, I could see us including
it.  Either way, it needs writing in poppler first.
