Epiphany 1.2 has several options to lockdown browser features that should be useful.
We also accept feedback on 
http://bugzilla.gnome.org/show_bug.cgi?id=123784
That probably give some info on the preferences too.
I dont think we have docs about them (but we should really have).
I'm ccing the epiphany mailing list, maybe someone there can help you out.
