There's a key you can set in about:config (or add in
~/.gnome2/epiphany/mozilla/epiphany/prefs.js),
"general.useragent.override" (create as type 'string' if it doesn't
exist). However, there's a catch: IE UA string starts with
"Mozilla/4.0", which will cause epiphany (and mozilla) not to start up
if you have the java plugin installed, see
http://bugzilla.mozilla.org/show_bug.cgi?id=83376 . Maybe you could try
to use the IE string but replace the /4.0 with /5.0.
