The icon which is missing is "insert-text". The GNOME icon theme in Ubuntu is split into more packages than on Debian, so the (Debian) easytag package does not depend on the correct icon theme package on Ubuntu. You need to install the "gnome-icon-theme-full" package, which includes the "insert-text" icon.
