EasyTAG does not currently have a command-line mode, although it is planned. Also, CentOS 6 is too old to support the latest version of EasyTAG (even the stable 2.2.x version that is compatible with GTK+ 2).
A better solution for your needs is probably something like eyeD3 (if you only need ID3 metadata) or lltag.
