Translations of GNOME projects are generally not the responsibility of the maintainer, except for problems with the source strings. For Italian translations, you should contact the Italian translation team:
https://live.gnome.org/ItalianTeamEasyTAG has not had any updates for Italian translations since moving to gnome.org, but the Italian team should be able to give good advice on the grammar issues that you mentioned.
