What version of gnome-shell are you using? To edit menu items and folder install an application called 'alacarte'..

Sorry, I know it is not the mailing list to ask such questions, but I
checked /etc/xdg/menus, /usr/share/desktop-directories, could not find
the file contains the top menu definition.
