F10 is the standard "open menu" binding.
You can change it in your ~/.gtkrc-2.0 for now like this:
gtk-menu-bar-accel = "<Ctrl><Shift>m"
File a gnome-terminal bug to add a way to edit it to the
Edit->Keybindings dialog.
