Revert "Go back to "Text Editor" in the .desktop file"
This reverts commit b9efbab8baf26a44e4b7718087f46bf229b77389.
Now that gnome-text-editor is GNOME's recommended Text Editor,
it doesn't make sense to have 2 apps that people could have
installed have the same display name.
