[gnome-user-docs] gnome-help: Empathy is dead. Hence replace it with Polari.

    gnome-help: Empathy is dead. Hence replace it with Polari.
    
    XChat is dead. Hence replace it with HexChat.
    Mibbit does not offer GIMPnet in its dropdown. Hence remove it.
