[glib] docs: Fix syntax in GDBusInterfaceSkeleton documentation

    docs: Fix syntax in GDBusInterfaceSkeleton documentation
    
    gtk-doc was mis-parsing the combination of ` and :: and truncating some
    of the documentation. Avoid that by using the D-Bus style of separating
    interface and signal names using a dot.
