The keypad plus and minus keys will zoom. There are outstanding tickets to bind them to other keys: https://bugzilla.gnome.org/show_bug.cgi?id=731244

I think it would be easier and fastr to have a shortcut key to make the zoom in and out. This should be "control +" and "control -" like in browsers.
