Which version of Banshee are you using, and what settings specifically do you want to reset?  I don't remember ever telling Banshee what kind of iPod I was using, and the syncing preferences should be available if you click on your device in the left column.  The first time you plug your iPod in, if Banshee can't read the database, it might offer to rebuild the iPod database, but I don't think there are necessarily any preference options there that you'd need to change later.
