I do the same using NFS on my NAS, and have Banshee on a couple of other computers mount the directory in my fstab. Works great!

Sure, but I guess it depends on how you do it. I keep all my music on
a server in my house, which I mount to a local path on my work machine
using sshfs, and Banshee uses it quite happily and lets me sync to my
G1.
How does your NAS share files? It seems to me that if you can mount
the music directory on your Linux box, Banshee should have no trouble
with it.
