Problem Changing iPod Transcoding Settings

I am currently running Ubuntu 7.04 with the standard Banshee 0.12.0 from
the Ubuntu repositories and I cannot change the "encode to" settings.

I was experimenting with aac, and it turns out the music transcoded is
unplayable (I believe that is a known issue), but when I tried to change
it back the settings never stick. 

Is there any configuration file I can mess with or any other way to
change this.
