If I understand the question correctly, then it's:
Tools->Mail Settings, select an account, click "Edit", select the
"Receiving Mail" tab.  In the "Server Configuration" box there is a
"Username" field.

Thanks for the reply, the problem was that our organization had just
implemented mail-passwords which are different than normal Unix
login-passwords. And I tried with wrong password.. :)

What fooled me was that Evolution displayed as an error message something
like "username localhost authentication failed". I thought that because I
have set localhost as a server (SSH tunneling), Evolution would offer
"username localhost" as an username to the real mail server which would
surely reject that kind of username.

Well, havent yet tested it from the home but I think it'll work now..
