frustrating part is that I know Preferences is there somewhere because once
upon a time I accidentally stumbled upon the secret.

Hello, we generally use as few screenshots as possible in
documentation because the burden of keeping them up-to-date and
translating them is very high. If you think that there are specific
instances when they would help considerably or the documentation is
unclear, you can file enhancement requests for those at
https://bugzilla.gnome.org/enter_bug.cgi?product=system-monitor;component=docs;version=3.14.x

Please file one enhancement request per issue and keep in mind that
improvements are normally only made in the latest version of GNOME,
which is currently 3.15.
