I'm not speaking to Ubuntu or Gnome specifically but I've had linux
machines up and running for over six months without a reboot.  The
only time it shoulbe necessary to reboot a linux system would be to
pull in new kernels or if you should lose power and well, that's
obvious if the power goes off.  Now automatic package updates might
require a reboot some time but again I say if it doesn't affect the
kernel, most processes can be restarted in place after package
install.  In fact, even kernel modules can be updated in place without
reboot.  Just reload the modules in question.

Linux is much more stable than windows and thus does not have to be
rebooted all the time.
