Until someone updates the wikki with any of this, your next bet and
most current would be to do a Ctrl-Insert+Space to open the
application specific settings for Orca and Thunderbird. Then get to
the key bindings page and scroll down the list. I think application
specific keys come first and the global stuff follows.
