How can i display a submenu of a menu in menubar without cascade

hi
can i remove the cascading effect that is there while displaying submenu of
a menu

and also i want to know how widgets are mapped on to keyboard 
for eg: if there r two buttons "OK" and "Cancel", normally they can be
accessed 
using tab key, so how can i use some other key for doing the same?
