I can't help you on the pilot-link front beyond the detail that David
has given already.

If you can get network sync to work (-p net:) then you should be able to
use gnome-pilot 2.0.14 to sync with evolution.  I guess it'll be pretty
slow, but if it's reliable then I'm sure you can live with that!
