hundred mails, I just want to see a few mails on my mobile device,

As to archiving old mails, you can do that if you want just by (in
Evolution) configuring "copy folder for offline operation", as one
of
several alternatives.

And if I do it again and again, do I get each time a new copy or will
it sync, so that I might lose some mails? What is the relation
between
the copied folder/folders and the folders on the server?

Of course it won't download again and again. Syncing means it keeps the
local and remote versions in sync. Note that this also means that if
you delete something on one then it will delete it on the other. If
that's not what you want then you don't need syncing but archiving,
i.e. essentially a backup. Which you can also do with IMAP but may not
be so directly supported by the MUA.

Just this single work flow already doesn't provide what I need, since
I
don't want to see a list with many mails, I only want a list with a
few
mails.

The mobile MUAs I've seen will typically show only the latest mails by
default. You can also usually configure them only to show new (i.e.
unread) ones.

And assumed the rest for this single work flow should be
solvable, it requires reading manuals, especially for the proprietary
software for the Apple mobile device.

I've never seen a manual for an Apple mobile device. I'm not sure there
are any. It's supposed to be obvious (their words, not mine).

I want to make real-time music
with the tablet PC and with POP accounts I'm able to just get the few
mails I want, without much effort. IMAP makes it complicated and
seems
not to provide what I want.

It's simply not correct, that as soon as mails from one account
should
be available for different machines, IMAP always is the best
solution.
POP has got some advantages, for some work flows.

Keep in mind that an Apple MUA for a tablet PC does not provide the
features Claws or Evolution for my Linux PC provide and for real-time
music OTOH there's no Linux based tablet PC available, there's
nothing
else, but Apple. So even if there would be IMAP solutions that fit to
my work flow, should be possible with e.g. Evolution, doesn't mean
that
they are available for the mobile device, too.

Apple Mail on mobile devices supports IMAP.

I can sort much more than 10,000 mails easily with a Linux MUA, but I
already can't handle a list (downloaded or not) with around 100 mails
with the Apple MUA, due to missing functionality. Assumed there
should
be Evolution available for a Linux tablet PC, then there would be the
other issue, that the Linux tablet PC can't be used for serious music
work.

I don't know what your specific need is, but I have several family
members who are professional musicians and teachers of music and they
are 100% Apple users (phones, tablets and desktops), including
everything to do with communications, music editing, publishing,
publicity and performance. However I fail to see what that has to do
with email.
