You need to install 'gnome-tweak-tool' and with that you can alter the
Gnome 3 font settings.

It may be easier to use Gnome to get things setup correctly with
Evolution, then switch back to kde.  (And you never know, you might get
to like Gnome 3 - I was skeptical, but persevered with it and now Gnome
2 feels very dated!)

I tried Gnome 3 for about a week, and the more I used it, the less I
liked it.  The way I use my system -- a lot of switching between windows
-- works easier under the old M$/Apple/Xerox desktop model than under
the Gnome 3 model.  "There's no arguing about taste said the old lady as
she kissed her cow."
