Oh yes, sorry!

The idea is to have at least, among other labels, a menu item called [New label...], this will pop-up a dialog where you can enter a name and select a color for the new label. They are then stored with the mail following the mail backend protocol (IE: for IMAP, the label is stored as a FLAG).

This method can be useful to categorize mails having different subjects in the same folder (typically INBOX).

Then you can bound a virtual folder to a label or set-up a filter to move the labelled mail.

In gmail, a typical (simplified) usage for me is to:
 * scroll my mails in the INBOX
 * label the mails: for example I label mail coming from my bank or about my purchase as 'money'
 * I click on the Archive button and they are moved away from my INBOX to an Archive folder.
 * the mail can then be accessed by looking into a "virtual folder" called 'money'

so how do you label mails in gmail and where is the difference? do not
expect everybody here to know gmail. :-)
what exactly would be an easier and more quick way for you in evolution?
you are not satisfied by the current context menu access?

everybody can receive attachments, but not everybody has an application
to open them. ;-)
