I use gpg for a number of things and was wondering if there is a howto
to add this to my emails.

well, there isn't exactly a howto, but you can get the user's guide for
evolution 1.2 here:

here you can find a good explanation what to do.

one also should say that evolution only does not support inline
signature/encryption as the one you have posted, but only an attached
file with the signature (like this email). if you want to raise your
voice for inline support, search the archives (link see below) for this
bug and/or the discussion about thsi whole think.
