[Evolution] change printing font for mails

I'd like to have access to the fonts used for printing e-mails. It looks
like I've been able to do so and change it, but I can't find my way
back, and I haven't been able to find the information in the help topics
or the menus (I'm using the evolution 1.4 version). 
Could someone give me some hints? Thanks for the help.
