I have a feeling that gconftool is for Gnome 2 and Evolution is only Gnome 1, You need to set the proxy somewhare else for Evolution to recognice it.
Maybe someone more experienced in the Gnome 1 /Gnome 2 issues could help further.

but it doesn't work, even though the same proxy-settings do work with

do I need to configure the proxy as "http://proxy.unibe.ch" or as
"proxy.unibe.ch"?
