If you feel like investing some time, you can have a central linux
computer running a whole bunch of Evolution clients, then you run a
cygwin with X server and small window manager and in it you run
evolution that is running on Linux. If you do things right (ssh, rsa
key, window manager that let you do full resize...) people will think
they use Evolution on inferior operating system. Also, you can do
something similar using VNC.
