John,
First time writing to a mailing list so I hope I am doing this the right way.
I struggle every time with the same issue and that is how I came across with your message in the mailing list.
I had some time to spare and worked through the source code in the file 'ev-print-operation.c'
This workaround seems to work fine with Ubuntu 10.04 and Evince 2.30.3
Edit the 'print-settings' file (~/.gnome2/evince/print-settings)
Under the '[Print Settings]' section add:
evince-print-setting-page-scale=2
0 = "None"
1 = "Shrink to Printable Area"
2 = "Fit to Printable Area"
