When given word docs with images embedded, I use the "Save as HTML" function, which puts the images in a subdirectory there. Toss the HTML and get your images.

Now, whether that will work for a Visio embedded image, I don't know. And of course, your output will be a jpg, not whatever it was when it went in there.
