Both should be offered because, if you cut things out without an opportunity

For the same reason as above, both should be offered.  What you could have
is, somewhere in the preferences, a page with:

Menus

[x] Galeon 1.x layout

[x] Simplified layout

Preferences

[x] All Galeon 1.x options

[x] Simplified options 

Then, when you navigate to the other pages of the preferences, you see the
'advanced' options only if the 'All Galeon 1.x options' option had been
selected.

(I suggest the default is to have the 1.x options both selected).

Yes and no. There seems no particular reason to change what's implemented; I
don't like gestures, but plenty of people do and they're becoming
semi-standard (Opera made a big fuss about implementing them).         I

have no opinion either way on the MIME issue.
