I think you don't launch gnumeric, but a gnumeric viewer inside nautilus
(does new version of gnumeric have it now ?). On your file, do right
click and move you mouse cursor on the "Open with" tab. You'll have a
selection of applications and nautilus viewers. Choose one application
and it will launch and open your file outside of nautilus (and you can
work on it). See the Nautilus help->Navigating your computer->Opening Files.

Open a nautilus window. Click on 'Edit', then 'Preference's. Click on
the 'Behavior' tab. Check 'Open activated item in a new window'. Note,
however, that this will open a new window every time you open a folder.
