application associations Red Hat 9

I have installed openoffice 1.1 on Linux RedHat 9.0.
When I now doubleclick an OpenOffice document, it is not automatically
opened any more.
I tried to repair the associations with right clicking | open with... |
other application | go there
But I could not fix it.
Do you know a clear description how to associate documents with
applications?
