I'm not sure how putting the text on the left of the icons would save space
-- it seems like it would require lots of horizontal space, wouldn't it?
Note that there is a GNOME-wide preference to turn off toolbar labels
entirely. It's in the GNOME control center under User Interface >
Applications ("Toolbars have text labels"). If you change this setting, you
have to quit and restart Nautilus to see the effects, due to a bug in
Bonobo.
