Brilliant! :)

Seams that GStreamer defaulted to osssink, which wasn't installed, but alsasink was. Changing the settings in the properties panel to use Custom (and hence alsasink) solved the problem.

I've re-installed gstreamer and the alsa oss layer, both to no effect.
