GTK Stock icons

Been having a hard time trying to find information about the stock
icons from GTK. I am in the process of making an icon set and would
like to use the themes icons for every single icon the program will
car for.
I have found most of the icon information here:

But it still leaves many icons that arent accounted for. I also have a
question regarding the structure of the icon themes.
Currently I have a directory structure that has many different child
directories under the "stock" directory. In these are directories
labeled things like "chart" "code" "generic", etc. This can be seen in
the default "hicolor" gnome theme. I am wondering if these are being
used anymore?
I currently have the "gtk" directory located outside of the "stock"
directory and all seems to work...is this correct?
Any information on the proper structure of icon themes in GTK or GNOME
would be awesome.
