Hrm, you must have an older version of gtk or something. It works great for me.
char text[256] = "blah blah blah...";
gtk_clist_append(GTK_CLIST(some_clist), &text);
I pulled that right out of some code i wrote last week. I even checked that it
compiled properly and ran as well.
