This is already possible from the keyboard, as Owen said.  The Amiga
implements one possible mouse-only solution: it lets you click multiple
items on a menu by holding down the right mouse button while you click
with the left button. It would probably make more sense to swap that
around if you were doing it in gtk (i.e. click with right while holding
down the left), given that the right button is the one you have to hold
down to access the menus on an Amiga anyway... but it does involve
chording which the HIG frowns upon :)  Can't deny it's a pretty useful
feature at times though.
