IIRC gm does not change the volume settings on startup. In many cases you can change the mic sensitivity via the slider in the audio tab of gm, but this may fail with card which have a large set of mixers, eg. Audigy, or devices different to normal soundcards, eg. USB Headsets, as there is no easy way to determine which is the correct mixer for this. After you have setup your soundcard - selected the right input source, adjusted sensitivity and speaker volume - there should be no need to adjust anything for an incoming or outgoing call.
