Find your gdm.conf file:
/opt/gnome/etc/gdm/gdm.conf

(substitute whatever installation prefix you used for `/opt/gnome')

And find the line that starts:
GtkRC=

and add the path to the theme's gtkrc file, e.g.
GtkRC=/opt/gnome/share/themes/My-Favourite-Theme/gtk/gtkrc
