Linux from scratch is an entire guide to building a full feature linux system from source. I used it for some time but it was to time consuming (fun though). Down 
here is a guide to building gnome 2.12 from source (beyond linux from scratch).

If I were going to do it, I would look at my distro's packaging
system, in this case Gentoo's Gnome ebuilds.  Ebuilds are scripts, and
so it's all step by step right there.  It would just take a long time
and a lot of jumping around.
