Nautilus "Open With" menu and stuff

Hi,

It's pretty clear how to add things to the "Open With" menu in
Nautilus, but I have no idea how to remove things from them once
they're there. I've found that these settings are stored in a file
.gnome/application-info/user.applications and
.gnome/mime-info/user.keys but these files say I can't edit them
directly -- so how can I remove the items?
