Is one is a little difficult.
1. Open your favorite GNOME text editor.
2. Drag & drop the icon to the editor. You'll see some text.
3. Somewhere you'll see this:
Name=The icon's name
Change "The icon's name" to the name you desire.
4. Save.
5. Click on an empty place on the desktop, so that the desktop is
focused, and press Ctrl+R (reload).

Drag & Drop panel icons or main menu items to the desktop.
