Association of file types

Hello,
I'm new to GNOME. It's a wonderful integrated desktop.
My questions are:
1) How can I map file types to programs. Example, if I doubel-click on a
".tar.gz" file, I want that gtkzip is started and opened with this file.
(like M$Windoze...)
2) Can enlightenment have a bar for open apps, like M$ Windoze... or IceWm?
